Beef Bone-In Short Rib

Beef bone-in short ribs are a very flavorful cut that must be slow cooked to become tender. The bones help hold the meat together and add flavor & body to braising liquids they’re cooked in. Short ribs can also be smoked or slow roasted with very flavorful results, though they may be less tender.

Boneless short ribs are also available that have had the bones cut away, and bone-in short ribs are sometimes cross-cut into sliced short ribs for easier & faster cooking.

These short ribs are center cut from the short ribs running through the chuck & plate.

Applications: Braise, Smoke, Sous Vide, Slow Roast.
